Hampton Creek’s eggless mayonnaise has gone south of the border. Just Mayo, made from yellow pea-based protein rather than eggs, will now be sold at Mexican Walmarts (WMT).

Josh Tetrick, CEO and founder of Hampton Creek, a natural food company based in San Francisco, confirmed the partnership. Just Mayo and other Hampton Creek products, including Just Cookies and Just Cookie Dough (both eggless), are currently sold in American Walmarts.

The eggless mayonnaise is already available in Mexico at Costco wholesale stores.

The Walmart news comes after Tetrick tweeted on June 11 that 7-Eleven will begin using the eggless mayo in all of their deli products. He told Yahoo Finance the change will be implemented over the next couple of months.

7-Eleven did not respond for comment.

Vegan mayonnaise at 7-Eleven -- home of the Slurpee and Big Gulp -- might sound counterintuitive to some, but Tetrick resists confining Hampton Creek to the “health food” category. He says they’re just trying to make natural food accessible to the broader public.

“The 7-Eleven partnership is about: how do you figure out a way to scale good food,” he said. The company wants to eliminate food that’s bad for the body and bad for the environment, but do so in a way that doesn’t alienate any consumer base.

Just Cookies, Hampton Creek’s dairy-free, cholesterol-free, Oprah-endorsed dessert, is sold in specialty health stores and supermarkets alike, including Whole Foods, Target, Walmart.

Tetrick said he wants people to enjoy Hampton Creek Just Mayo and taste mayonnaise, not a health food substitute. The real victory is winning over the average consumer, not just “the people who care.”

The 7-Eleven partnership is a step in the right direction for the company as more consumers are headed there than health food stores anyway.

Another big factor in appealing to a broad audience? Price. (An 8-ounce bottle of Just Mayo sells for only $1.99 at Target).

The avian flu epidemic — which has caused a fair amount of alarm in the food-service industry this year — has “accelerated” Hampton Creek’s success, according to Tetrick. He said that 53 major food companies have reached out to them to discuss ways to reduce their egg dependency.

According to a recent Inc. article, Hampton Creek estimates their revenue run rate will rise from $48 million to $120 million by next January thanks to the egg shortage.

“We’re not on a campaign against chicken eggs. We’re on a campaign against things that don’t make sense,” Tetrick added.
